Place into a 12 x 9 casserole dish. Top notes of brazillian orange, bergamot, and bread with cinnamon, nutmeg, and lily of the valley on a base of vanilla and raspberry. Place sliced sweet potatoes in an ungreased 9x13 dish in a single layer cut side up. At the 30 minute mark, remove the yams from the oven and baste (or spoon) the maple sauce over the yams (for further caramelization). Remove from the oven and peel back the foil and stir the potatoes.

Place the foil back over the top of the pan and bake for an additional 15 to 20 minutes or until yams/sweet potatoes are tender.

Reduce heat and simmer about 45 minutes, stirring occasionally. Bake at 400 degrees until bubbly about 45 minutes basting every 15 minutes. Mix the sugar, cinnamon, nutmeg and salt. Myself, i prefer these candied ones to just the regular yams because the subtle spice and syrup enhance the flavor. Next peel and slice yams or sweet potatoes into rounds then add them to your prepared dish. Bake in 350 degrees for 45 to 50 minutes.
